Job Description for the Position of Lodge Chef

The Lodge Chef must be well groomed and be congenial with our guests who frequently wander into the kitchen. In addition, the Chef must enjoy working with other kitchen staff who share kitchen quarters throughout the day. The responsibilities of the Chef include menu planning, stocking and inventory, care of frozen and fresh food items, keeping the kitchen, three freezers, and two refrigerators organized and clean, and helping with dinner dishes and cleanup as necessary. Fresh produce and frozen foods are flown in once a week. Flexibility is needed to deal with an occasional late arrival of the weekly order. The Chef is in charge of all food service, including up to 5 breakfasts weekly, for up to16 guests and 15 employees. Kitchen staff includes the prep cook/ baker, and the dishwasher/kitchen helper.

The Chef works a 10 - 12  hour day, starting around 7 a.m. and finishing around 9 p.m. A few hours break may be taken in the afternoons. There is always the possibility of late arriving airplanes and weather delays so one must be prepared for the unexpected.  The may also be weeks that are less demanding, depending on guest count.

Breakfast is served at 8 a.m. by the assistant chef most mornings. The Chef prepares breakfast on the assistants mornings off. Soup, sandwiches, and freshly baked cookies are sent out with the guests. The Chef is responsible for lunch for all staff at the lodge on a daily basis as well as for guests who wish to return to the lodge for lunch due to weather conditions. The Lodge Managers provide a weekly menu that rotates every seven days. Any changes must be approved.   Employees are served the same meals as guests. Meals for the most part are served buffet style, including dinners. After dinner plates are cleared, dessert is served. 

The chef must be able to work with what is available as well as to utilize leftovers. He or she prepares fresh soups, sandwiches (prepped for the next day), salads, appetizers, and entrees daily. The Chef is responsible for complete cleanup of the kitchen every night after dinner with assistance from the other kitchen staff. He or she is required to make sure all kitchen equipment is kept clean and functioning.

The Chef is responsible for providing the Lodge Manager with a request for food items to be ordered each week. These include fresh produce, breads, meats, and dairy products.

The Chef must be in excellent health and able to lift 50 pound boxes of dry goods. 

Management expects superior performance from employees in personal hygiene, professional contact with clients and good relations with other employees. We look for excellence in attitude and work ethics. We require a Chef who can present himself or herself in an outgoing manner.  All employees must be willing to put in long hours and be capable of handling a split shift position. Changeover day is a very active and busy day with every employee pitching in with the work until the job is done.

Lodge Requirements

Staff appearance gives our guests the impression of the quality of our service and the cleanliness of our kitchen. We insist on a neat, professional appearance. We furnish Wildman Lake Lodge tee shirts with our logo on them. The Chef may wear neat, clean jeans or chef pants, along with appropriate kitchen footwear. We prefer clean shaven faces; however, we will permit well-trimmed mustaches. Beards are discouraged. Hair must be neatly trimmed, and no facial piercing is permitted. Women must have their hair pulled back in a ponytail or must have short hair. A hat or hair net will be worn in the kitchen.

Our employees must all share living quarters with at least one other person.  A clothes washing machine may be used any day except changeover day.

Certain rules apply to all employees:

         •  No drugs, excessive drinking, or partying are allowed.

         •  Smoking is discouraged.  If this is a necessity, it may take place, but

            not in any building and preferably out of sight of our clients.

         •  Pets are not allowed.

Employment Dates, Salary, and Bonuses

The starting date will be about June 10, and the job will end approximately September 30.

Wildman Lake Lodge employees are paid the highest salaries in the business.  In return, we expect our employees to make sure that our guests get an outstanding vacation at our remote wilderness fishing lodge. Working at the lodge is not only an adventure but an opportunity to save money. Unlike other jobs, we furnish room and meals.  Entire incomes can be saved as there is nowhere to spend money. Moreover, all staff at Wildman Lake Lodge share equally in gratuities. Our lodge enjoys generous tips.

Starting Chef salary will be about $3,500.00 per month plus tips. Payroll is done quarterly. Staff may take up to two draws on unpaid wages per pay period totaling no more than 70% of the amount due the employee. The company will issue the final payroll check within 14 days of the end of the term of employment.

The employee will be responsible for travel expenses to and from the lodge. This includes round trip airline transportation from the employee’s hometown as well as lodging and meals enroute. Commercial airline ticketing is available to the Lodge. 

Provided that the employee performs his duties satisfactorily for the full term of the employment as described above, and has not been terminated for causes described below, the Managers shall include in the employee’s final paycheck a season end bonus of seven hundred and fifty dollars ($750.00). This bonus is primarily an inducement for the employee to stay the entire season. If the employee is terminated for any of the reasons listed below, the employee will not be entitled to any bonus or reimbursement of airfare.

             Reasons for Termination

         •  Use of drugs or excessive use of alcohol at any time

         •  Nonperformance of the work assigned by supervisors  

         •  Not cooperating or getting along with supervisors, coworkers or clients

         •  Endangering coworkers or clients due to recklessness or negligent acts

         •  Use of abusive or excessive profane language around guests or coworkers

         •  Refusing to conform to dress standards, i.e., maintaining a professional appearance

Staff Activities

Our employees enjoy our remote, wilderness location. Activities include wildlife viewing of bears, moose, and caribou as well as bird watching, fishing and hiking. Staff will have the opportunity to go out in the lodge owned boats and aircraft with our guides and guests, if space and time are available.  Fishing is also available within walking distance from the Lodge. Bring fly fishing gear if desired. The Lodge has spin fishing gear for individual use. We also have a video collection and library.
